Recipes Around Here Lately (July)

I cooked zero new things in June, but in the last few weeks of July I tried a few recipes that I’d make again. In my opinion, that is the ultimate compliment to a recipe. How many times do you try something new only to find it “meh?” Happens to me a lot, and after all the work, I end up less motivated to try something new again. I hope that sharing the meals we’ve liked in this house will help others (and help me remember for later).

Four recipes that I loved

Caprese Salad from The Kitchn: My sister-in-law, Jaci, is always throwing together great salads off the top of her head. She did something like this basic caprese salad one day at the lake. I forgot how much I love the combination of fresh mozzarella, basil, tomatoes, and balsamic vinegar.

Smitten Kitchen Chopped Salad With Feta, Lime, and Mint: I recommend making a huge batch of this one and eating it for DAYS!

Half Baked Harvest Spicy Coconut Basil Chicken Curry With Garden Vegetables: I doubled this recipe and the whole family ate it for several days, and a few of my teenage son’s friends did, too.

Half Baked Harvest Frozen Mango Mojito-rita: Another winner from HBH. Bryan made a batch of this really fun and delicious cocktail on my request. He’s our resident mixologist. We had them outside one night. Big crowd pleaser!

  1. Oh, how have I missed that Smitten Kitchen Salad? We use her recipes in regular rotation and that is just the kind of summer salad I’ve been craving. Thanks for sharing!
