Recipes I Liked in January

 

Holy moly, I cooked A LOT in January–more than several other months combined. Maybe it’s because January is the longest month ever? And this is just a list of NEW things I’ve made. I also made a bunch of my favorites (listed here) from Peas, Love & Carrots.

The Winners! 

Dairy Free White Bean Chili from Emily’s Fresh Kitchen: This chili was creamy thanks to the method Emily suggests with the beans and it’s very delicious. We ate the leftovers for days. Would definitely make it again. I think it was a tad too spicy for me so I might go easier on the jalapeño peppers next time. I can’t say strongly enough how essential my immersion blender is. Makes soups and stews so easy!

Shaved Vegetable Farro Salad from The Balaboosta Chef: This is my childhood friend Jenni’s site and it’s so good. This recipe is amazing! I’ve made it a few times already. I love how you can keep it in the fridge for days and it only gets better. Thanks to my friend Julie L for telling me to try this one!

Korean Beef Bowls from Damn Delicious: All four of my kids loved this dish. Enough said. Thanks to Jenna from Lemon Squeezy for suggesting this recipe. Jenna makes meals for people to order in Minneapolis. Check that out here. And she’s on instagram here.

Sheet Pan Shawarma from The Defined Dish: I generally love the flavors in shawarma and this did not disappoint.

Avocado Salad with Carrot Ginger Dressing from Smitten Kitchen: I loved the flavor in this dressing. Reminded me of the dressing in sushi restaurants.

Braised Coconut Curry Chicken Skillet from The Pretty Dish: I’m a fan of coconut curry dishes. This one was flavorful! I think I’d like it a little spicier, but that’s easily fixable. Thanks to my friend Debra who runs the amazing Instagram account @fortheloveofcookbooks for suggesting this one. Note that Debra mostly uses cookbooks, but she found this recipe online after I insisted she show me a version.

30 Minute Creamy Sesemae Miso Ramen with Crispy Mushrooms from Half Baked Harvest: This was so comforting and delicious. Maybe a bit salty. She suggests low sodium broth and soy sauce, but I only had regular in the house. I’d for sure make this again but I’d use the low sodium. Thank you to my friend Nancy F for suggesting this one.

Easy Falafel from The Mediterranean Dish: My 11-year-old daughter chose this recipe and did half of the work.  We loved this meal!

Roasted Cauliflower with Pumpkin Seeds, Brown Butter and Lime from Smitten Kitchen: I liked this dish, but found it too buttery. My husband loved it so I included it here. I tossed it all with baby spinach and arugula.

Green Shakshuka from The Healthy Maven: I loved this twist on shakshuka and will make it again whenever I have a lot of fresh herbs around from other recipes. Thanks to Julie L for introducing me to The Healthy Maven.

Chocolate Chip Pan Banging Cookies from Sarah Kieffer (and also featured in Ina Garten’s newest cookbook): These were great. What’s not to like about giant chocolate chip cookies? I can’t say I was thrilled about having to stay by the oven to do the banging every three minutes for 20 minutes, but I’d still make them again some time.
